Cabarnet Sauvignon, Merlot, Petit Verdo Grapes are hand-picked at dawn, crushed upon arrival to the winery each variety is cold soaked for 24 hours separately in conical stainless steel tanks prior to fermentation which lasts around 10 days after fermentation the wine sits on the skins another 48 hours. each veriety aged separately for 24 months in French oak barrels towards the end of the aging period the varieties are analyzed in relation to the other varieties in order to determine the final blend. The wine was bottled in May of 2021 and left to age in the winey for 6 months prior to release.
